How to Eat Hotpot in China
Hotpot is a shared cooking method, not one dish. Choose the regional style first, then the broth, dipping sauce and a balanced first round. For two people, start with five or six small plates; add more only after seeing the portion size.
Choose the style
| Style | What defines it | Best first order |
|---|---|---|
| Chongqing | beef-tallow red broth, direct chile and numbing pepper | mild red broth, tripe, beef, tofu, root vegetables |
| Chengdu/Sichuan | broader spectrum of red broth, skewers and cooked/seasoned items | divided pot when the group differs on spice |
| Beijing copper pot | clear broth, thin lamb, sesame sauce | lamb, cabbage, tofu, noodles |
| Chaoshan beef | clear beef broth, very fresh sliced cuts, satay sauce | ask staff for a small mixed-cut set |
| Yunnan mushroom | multiple mushrooms and a strict cooking timer | staff-selected safe set; do not shorten the boil |
| Hainan coconut chicken | sweet coconut broth and chicken | chicken first, vegetables after the broth develops |
Order the broth honestly
微辣 (wēilà) means mildly spicy, but Chongqing mild can still be intense. A 鸳鸯锅 (yuānyāng guō) divides spicy and non-spicy broth; a three- or four-section pot can separate allergy or dietary needs, though cross-contact remains likely.
For a red broth, ask whether it uses beef tallow. This matters for vegetarians and diners avoiding beef. A plain-looking tomato or mushroom broth may still contain chicken stock, lard or seasoning powder, so confirm rather than assuming.
Build a first round
Order one or two items from each group:
- meat or protein: sliced beef/lamb, fish, tofu or bean-curd skin;
- quick-cook texture: tripe, duck intestine or fish slices if the group wants them;
- vegetables: lotus root, potato, winter melon, mushrooms or greens;
- starch: sweet-potato noodles, rice cake or noodles near the end;
- cooling side: cucumber, jelly or a small fried snack while the pot heats.
Do not order every “must eat” organ cut. A focused table is easier to cook and wastes less. In a heavy Chongqing tallow broth, leafy greens absorb large amounts of oil; put them late or choose root vegetables instead.
Chaoshan beef: cut-by-cut timing
Chaoshan beef hotpot is built around beef cut to order and cooked for seconds in clear broth. Lift each slice with the small strainer ladle and eat it the moment it turns pale pink; long boiling ruins it.
| Cut | Where it comes from | Roughly how long |
|---|---|---|
| Diaolong (吊龙) | Long back muscle; the signature cut | 8–10 seconds |
| Diaolong ban (吊龙伴) | Edge of the same muscle, with a thin fat seam | 8–10 seconds |
| Chi ren (匙仁) | Center of the shoulder blade; the most marbled and tender | About 8 seconds |
| Chi bing (匙柄) | Outer shoulder, with a little sinew | 10–12 seconds |
| Nen rou (嫩肉) | Lean hind leg; cheap and clean-tasting | 8–10 seconds |
| Wuhua zhi / sanhua zhi (五花趾 / 三花趾) | Sinewy leg muscle that turns crunchy | 12–15 seconds |
| Xiongkou lao (胸口朥) | Brisket fat and connective tissue | 40–60 seconds or longer, until crisp-chewy |
Eating order:
- Go from tender to chewy: diaolong and chi ren first, then the sinewy cuts.
- Next comes xiongkou lao and handmade beef balls.
- Then vegetables.
- Finish with flat rice noodles (粿条) once the broth has become sweet.
Order a plate or two at a time rather than tipping the whole order in at once. Shacha (沙茶) sauce is the classic dip.
Chongqing: neighborhood old hotpot instead of the chains
Locals usually steer visitors away from big branded chains toward small "old hotpot" (老火锅) rooms under apartment blocks. These recurring names in late-2026 local recommendations sit near the usual sights:
| Hotpot | Location | Notes | Per person |
|---|---|---|---|
| Chunhong (春红火锅) | Old street near Jiefangbei, close to Shibati | Spacious; known for stewed sides and iced yangmei rice balls | About ¥70–80 |
| Lianjie (莲姐火锅) | Under apartments at Jiuchikan, a few minutes from Hongyadong | Very fresh hand-cut beef; one of the milder broths; split pots available | About ¥60–70 |
| Chen Pangzi (陈胖子火锅) | Qixinggang | Strong tallow broth; known for braised chicken feet and fresh eel | About ¥60–70 |
| Taopopo (陶婆婆火锅) | Dajing Lane | Gentler, fragrant broth; good if your group fears the heat | About ¥70 |
Typical prices in these rooms. Vegetables start at around ¥1–2 a plate and hand-cut fresh beef at about ¥4–6. A full meal is usually ¥60–80 a head.
Queues. They are common at 12:00 and from 18:00. Take a number early or go at 17:00.
Cooling the heat. Order a cooling dessert alongside: ice jelly (冰粉), rice "cool shrimp" (凉虾) or iced yangmei rice balls.
Make the dipping sauce
For Chongqing, a classic oil dip is sesame oil, garlic and scallion, sometimes with vinegar. Beijing lamb hotpot commonly uses sesame paste with fermented tofu, chive flower sauce and condiments. Chaoshan beef often uses shacha (satay) sauce.
There is no need to perform authenticity. Build a sauce you can eat, but use a clean spoon and keep raw-food chopsticks away from the communal sauce bar.
Cook safely
Place slow foods—dense root vegetables, tofu and cooked braised items—first. Swish thin meat until fully cooked. Tripe and duck intestine are often cooked briefly for texture, but a slogan such as “seven up, eight down” is not a food-safety timer. As a rough guide in Sichuan and Chongqing:
- Beef tripe (毛肚): about 15 seconds of dipping.
- Duck or goose intestine: 10–15 seconds, until it curls.
- Yellow throat (黄喉): a minute or two.
- Marinated tender beef (嫩牛肉): about a minute, until no red remains.
Follow the restaurant's instruction, keep raw and cooked utensils separate, and cook poultry, pork, seafood and minced products thoroughly.
Mushroom hotpot is different: some wild mushrooms are unsafe until fully cooked. Let staff control the timer and do not taste early.
Control spice and cost
- Start mild; a pot can be made hotter but not truly reversed.
- Ask about broth, condiment, tea and per-person table charges.
- Check whether meat is sold by plate, weight or set.
- For seafood or market-price items, confirm unit, weight and total before cooking.
- Stop ordering while food remains raw on the cart.
Cold sweet drinks can feel soothing but do not remove capsaicin. Dairy, starch and a slower pace help more. If a diner has a serious allergy, hotpot's shared utensils and splashing make it a high cross-contact environment; choose a different meal when separation cannot be guaranteed.

Final rule
Choose one regional style, order a small balanced first round and let the staff explain unfamiliar cooking times. Hotpot is best when the table stays in control of heat, cross-contact and waste.
